Spinach Salad with Steak and Strawberries

Ingredients

3 lb 1.5 kg Sirloin, Rib or Strip Loin Steak
3 3 fresh cello spinach (10 oz/285 g package)
18 18 oranges (size 88)
60 60 strawberries
1 1/2 oz 38 g steak spice
2 oz 60 mL vegetable oil

Instructions

  1. Pick and wash spinach. Drain and set aside.
  2. Peel oranges and cut each orange into 8 segments.
  3. Remove stem and cut each strawberry in half.
  4. Cut steak into 1/4" x 1 1/2" (5 mm x 3.75cm)strips. Season beef with steak spice.
  5. Heat vegetable oil in a large frying pan and sauté beef strips until medium rare. Set aside and chill.

Assembly

  1. In a salad bowl arrange 2 1/2 oz (63 g) spinach in bottom.
  2. In another bowl, lightly mix 4 oz (120 g) chilled beef, 12 orange segments and 10 strawberry halves on top of spinach.
  3. Garnish with julienne of spinach leaf.
