Cajun Steak

Ingredients

6 lb 2.7 kg top sirloin, 4 oz (100 g) portions
    flour for coating beef
1/4 c 50 mL vegetable oil
10 10 onions, cut julienne
1/3 c 75 mL fresh basil
100 oz 2.8 L beef stock
48 oz 1.4 L canned plum tomatoes, cut into strips
1/2 tbsp 7 mL cayenne pepper
2 tbsp 25 mL tabasco, or to taste
    parsley for garnish

Instructions

  1. Flatten steaks with meat mallet.
  2. Dip beef in flour and brown in hot oil.
  3. Remove from pan and set aside.
  4. Fry onion until golden, add beef steaks, and rest of ingredients except parsley.
  5. Simmer approx. 40 minutes or until beef is tender. Add water if necessary.
  6. Garnish with parsley.
