Braised Italian Style Short Ribs

Ingredients

12 lb 5.5 kg Beef Short Ribs
3/4 c 175 mL seasoned flour
1/2 c 125 mL oil, divided
3 3 large onions, chopped
3 3 cloves garlic, minced
2 c 500 mL tomato paste
12 c 3 L beef stock
5 5 bay leaves
2.2 lb 1 kg mushrooms, halved
4 4 large green peppers, cut in strips
3 3 large sweet red peppers, cut in strips
    salt, as desired
    pepper, as desired

Instructions

  1. Cut ribs into individual portions; dust with seasoned flour.
  2. In a large skillet heat 1/3 c (75 mL) oil and brown ribs; remove ribs.
  3. Add remaining oil to skillet and sauté onions and garlic until tender.
  4. Add tomato paste, beef stock and bay leaves to skillet; add ribs.
  5. Bring sauce to a simmer and cook for 1 1/2 to 2 hours until tender.
  6. Add mushrooms and peppers and cook for 30 minutes; adjust seasoning.
  7. Serve on noodles or risotto.
