Beef Spanish Omelet
Ingredients

Beef, cut in strips, (sirloin)
oil

medium onions, chopped

medium green peppers, chopped

medium tomatoes, chopped

small zucchini, sliced

parsley, chopped
salt, pepper, basil, as desired
salsa, optional
Instructions
Sauté beef in small amount of oil and reserve.
When ordered, sauté vegetables in a small amount of oil.
When vegetables are half way cooked, add beef and then egg mixture. Alternatively, cook vegetables and add beef; heat and reserve. Quickly prepare omelet and place beef mixture in the centre and fold. Season to taste. Salsa may be served on top or added before folding.
