Beef Spanish Omelet

Ingredients

2.2 lb 1 kg Beef, cut in strips, (sirloin)
    oil
3 3 medium onions, chopped
3 3 medium green peppers, chopped
5 5 medium tomatoes, chopped
2 2 small zucchini, sliced
3 tbsp 50 mL parsley, chopped
    salt, pepper, basil, as desired
    salsa, optional

Instructions

  1. Sauté beef in small amount of oil and reserve.
  2. When ordered, sauté vegetables in a small amount of oil.
  3. When vegetables are half way cooked, add beef and then egg mixture. Alternatively, cook vegetables and add beef; heat and reserve. Quickly prepare omelet and place beef mixture in the centre and fold. Season to taste. Salsa may be served on top or added before folding.
