Beef Salad Parisienne

Ingredients

5.5 lb 2.5 kg Lean cooked beef, cut in strips
4 c 1 L green beans, cooked and cut
2 c 500 mL cucumbers, sliced
6 c 1.5 L celery, sliced
4 c 1 L green peppers, diced
1 c 250 mL red peppers, diced
6 6 potatoes, cooked and cubed
4 c 1 L green onions, sliced
1/4 c 50 mL parsley, chopped
    tarragon, as desired
8 8 tomatoes, cut in wedges
2 2 eggs, hard cooked, sliced
Dressing    
1 c 250 mL vegetable oil
3/4 c 175 mL vinegar
2-3 tsp 10-15 mL salt
2 2 garlic cloves, finely chopped
1 1/2 tbsp 20 mL horseradish sauce
    tabasco sauce, as desired

Instructions

  1. Mix beef strips, green beans, cucumbers, celery, green and red peppers, potatoes, green onions and parsley. Season with tarragon to taste.
  2. Combine dressing ingredients. Add to salad, tossing well.
  3. Garnish with tomato wedges and egg slices. Sprinkle with additional chopped parsley as desired. Refrigerate 1 hour to blend flavours.
