Beef High Rollers

Ingredients

9 9 large flour tortillas, of choice
1 lb 500 g cream cheese
6 tbsp 75 mL mayonnaise
3/4 oz 20 g garlic, minced
2 tbsp 30 mL dijon-style mustard
2 1/2 tbsp 40 mL dried dillweed, or to taste
1 1/2 tsp 7 mL black pepper, or to taste
9 oz 250 g spinach leaves, trimmed, washed and dried
3 lb 1.4 kg cooked roast beef, sliced
3 lb 1.4 kg tomatoes, sliced
12 oz 350 g red onion, sliced
    green olives, garnish
    dill sprigs, garnish

Instructions

  1. Blend together cream cheese, mayonnaise, garlic, mustard, dill and black pepper.
  2. Spread cream cheese mixture evenly over tortillas.
  3. Layer spinach leaves, roast beef, tomatoes, and onion evenly on top.
  4. Roll up tightly, jelly roll fashion; trim edges and wrap in saran to maintain shape.
  5. Refrigerate at least 1 hour. Slice each roll into 1" (2.5 cm) slices.
  6. Serve with side salad.
