Yorkshire Braised Beef

Ingredients

4.5 lb 2 kg Diced Beef
2 oz 60 mL oil
4 4 medium onions, diced
6 6 garlic cloves, chopped
6 oz 180 mL dry red wine
4 c 1 L demi glace sauce
2 2 bay leaves
    salt and pepper to taste
Popovers:    
8 8 large eggs
6 c 1.5 L milk
    salt, pepper and nutmeg, to taste
1 lb 450 g flour

Instructions

Beef preparation:

  1. Season beef and sauté in skillet with oil until brown. Place browned beef in casserole dish.
  2. Sauté onions and garlic in skillet for a few minutes and deglaze with wine.
  3. Add the demi glace sauce and bay leaves, bring mixture to simmer and pour over meat.
  4. Braise in oven at 150°C (300°F) until beef pieces are fork tender.
  5. Adjust seasoning and take from oven.

Yorkshire Preparation:

  1. Beat eggs lightly, add milk and seasoning.
  2. Slowly beat in flour until mixture is like heavy cream.
  3. Heat individual iron or tin foil popover baking pan(s) (10-12cm, 4-5" wide) and add oil or butter to bottom of baking wells.
  4. Fill pan(s) with 2.5 cm (1") of batter.
  5. Bake in hot oven 230°C (450°F) for 20 minutes and then reduce heat to 175°C (350°F) and bake for 20 more minutes.
    Serve meat in popover with roasted vegetables of your choice and sauteed mushrooms.
