Picadillo

Ingredients

5.5 lb 2.5 kg Ground beef
5 5 onions, medium, chopped
4 4 garlic cloves, minced
1/2 c 125 mL lemon juice
1/3 c 75 mL sherry
10 10 tomatoes, chopped, firm
8 8 apples, peeled, cubed
3 to 4 3 to 4 hot peppers, diced
1 1/2 c 375 mL raisins
1 1/2 c 375 mL olives, stuffed, sliced
2 tsp 10 mL marjoram
1 tsp 5 mL thyme
    salt and pepper, to taste
    almond slices, toasted

Instructions

  1. Brown meat; drain off excess fat.
  2. Add onion and garlic; cook until tender. Reduce heat.
  3. Add lemon juice and sherry. Cook 5 minutes.
  4. Add tomatoes, apples, peppers, raisins, olives and seasonings. Season with salt and pepper. Cover and simmer 30 minutes.
  5. Serve on rice. Top with toasted almonds.
