Hearty Beef Borscht

Ingredients

3.3 lb 1.5 kg Beef Cubes, shoulder, chuck
10 c 2.5 L beef stock
2 2 carrots, large, sliced
3 3 celery stalks, sliced
1 1 cauliflower, medium sized, cut in pieces
3 3 onions, sliced
2 2 potatoes, large, cubed
2 2 leeks, sliced
3 3 bay leaves
2 tbsp 25 mL parsley, chopped
    tarragon, as desired
    salt and pepper ,as desired
6 c 1.5 L cooked beets, canned or fresh, diced or sliced
4 c 1 L beet juice
1/4 c 50 mL lemon juice
1 tbsp 15 mL sugar
    sour cream, as desired

Instructions

  1. Simmer beef cubes in beef stock in tightly covered pan for 1 hour. Skim off fat.
  2. Add carrots, celery, cauliflower, onions, potatoes, leeks, bay leaves and parsley. Season as desired. Bring to a boil; simmer 30 minutes or until meat and vegetables are tender.
  3. Add beets, beet juice, lemon juice, and sugar. Heat thoroughly. Correct seasonings.
  4. Serve hot with dollop of sour cream.
