Beef Souvlaki

Ingredients

1/3 c 75 mL olive oil
2 tbsp 25 mL lemon juice
10-12 10-12 garlic cloves, crushed
1/3 c 75 mL dried rosemary, whole crushed
6.5 lb 3 kg Sirloin Steak or butt, trimmed of excess fat
Tzaziki Sauce    
1 1 cucumber, seeded, peeled-grated
4-8 4-8 garlic cloves, minced (to taste)
3 c 750 mL yogurt, plain
    fine white bread crumbs, as needed

Instructions

Combine olive oil, lemon juice, garlic and rosemary in a shallow dish. Cut beef into 2" (5 cm) cubes. Place beef in marinade, covering all sides. Cover and marinate in refrigerator for 24-48 hours. Turn occasionally. Thread beef cubes on skewers. Grill or broil until medium. Combine cucumber, garlic and yogurt for sauce. Refrigerate a few hours before serving. Add bread crumbs to sauce to thicken if necessary. Serve with beef.
