Beef Mandarin Orange Stir-Fry

Ingredients

2.2 lb 1 kg top round or sirloin steak/roast
1/2 c 125 mL soy a sauce
1 c 250 mL orange juice
1/2 tsp 2 mL ginger
1/2 tsp 2 mL garlic powder
1/4 c 50 mL vegetable oil, divided
2 2 red onions, sliced
2 cups 500 mL mushrooms, sliced
2 2 medium green peppers, sliced
4 c 1 L snow peas
1/4 c 50 mL cornstarch
2 tbsp 25 mL water
2 c 500 mL canned mandarin oranges, drained

Instructions

  1. Cut beef into thin strips.
  2. Marinate beef in soy sauce, orange juice, ginger and garlic powder. Marinate 20 minutes for sirloin and 2 hours or more for top round.
  3. Drain beef, reserving marinade.
  4. Heat 2 tbsp (25 mL) oil in wok and stir fry beef until browned; remove from wok and drain liquid.
  5. Heat remaining oil in wok and sauté vegetables until tender-crisp; remove from wok and reserve.
  6. Add marinade to wok and bring to a boil.
  7. Combine water and cornstarch and add to marinade. Continue to cook until sauce is thickened.
  8. Add beef, vegetables and mandarin oranges to sauce. Heat and toss to coat.
  9. Serve on rice or Asian noodles.
